Comfort Food (Shepard’s Pie)

Shepard’s Pie: Old fashion Comfort Food.

This recipe for Shepard’s Pie takes a comfort food and trims the fat so you can incorporate it on a regular basis.

Saute 1 pound organic ground turkey with dash of olive oil.  Add 1/4 cup ketchup and 3 Tbsp Worcestershire sauce.  Add 1- 1/2 cups mixed peas, carrots, and corn.  Pour in baking dish.  While cooking boil 3 peeled potatoes.  Mash with 1/2 cup fat free Greek yogurt and 2 Tablespoons whipped butter or tub margarine (preference).  Spread over turkey mixture, sprinkle with paprika, and bake for 15-20 minutes at 400 degrees.  For last 2 minutes broil to brown on top.  Simple and easy.  Makes about 5 servings to give you 3 1/2  protein servings, 2 Carbohydrates, 1 1/2 fat servings.  You get 3 grams fiber too!
